Ruby Gillaspey, 76, of rural Pelican Rapids, MN, passed away peacefully at home on Friday, April 18, 2025, surrounded by her loving family.
Ruby was born on December 18, 1948, in Battle Lake, MN, to Oscar and Norma (Mostue) Peasley. She attended and was confirmed at Tonseth Lutheran Church near Erhard, MN. Ruby grew up in the Fergus Falls and Erhard areas and attended school at what is now known as Ye Old Schoolhouse and later attending Pelican Rapids High School.
On September 30, 1966, Ruby was united in marriage to Dave Gillaspey in Webster, South Dakota. The couple began their married life in Fridley, MN, before settling in rural Pelican Rapids, where they built their home and raised their family.
Ruby's greatest joy was time spent with family. She cherished shopping outings with her sisters, traveling-especially during winters in Arizona and Texas-and caring for her beloved horses. Her many interests included baking, gardening, reading, crocheting, and horseback riding. Ruby served as a Dietary Manager at Pelican Valley Nursing Home in Pelican Rapids, where she was known for her kindness and dedication.
Ruby is survived by her devoted husband, Dave; her children: Wade Gillaspey of Pelican Rapids, Jody (Dave) Reynolds of Rogers, and Jenny Satter of Rogers; her sisters: Darlene (Merlin) Bengtson and Dorene (Eugene) Milbeck; and her grandchildren: Brooklyn Kauffman, Gloria Reynolds, Cody Gillaspey, Elijah Reynolds, Tori Gillaspey, and Caden Satter. She is also survived by numerous nieces, nephews, and cousins.
She was preceded in death by her parents, Oscar Peasley, Norma and Clarence Helgeson, and her grandson, Carter Satter.
Ruby's passion for life, deep love for her family, and compassionate spirit will continue to inspire all who were fortunate to know her.
A celebration of Ruby's beautiful life will be held on Wednesday, April 30 at 2pm at Larson Funeral Home in Pelican Rapids. A visitation with the family will begin one hour prior. You are warmly invited to a reception at the home of Dave and Ruby following the service.
