Susan Elaine (West) Ellis, 69, of Bethlehem, formerly of Stroudsburg, passed away peacefully surrounded by family and friends on February 9, 2023 at Country Meadows Nursing Center of Green Pond, Bethlehem.
Born January 1, 1954 in Scranton, PA, Sue was the daughter of Edwin and Anna Mae (Jason) West of East Stroudsburg. She was the wife of William J. Ellis Jr. They celebrated their 48th wedding anniversary on July 13th. Susan was a graduate of East Stroudsburg High School Class of 1971. She then graduated from Youngstown State University and later earned her Master's Degree from East Stroudsburg University. Sue devoted her life to the field of education, and brought joy and knowledge to countless children. She started her teaching career in Roxbury, New Jersey but spent the majority of her time teaching in the East Stroudsburg Area School District, mainly in the Middle Smithfield and Resica Elementary Schools. She was the pioneer of the Camp Invention Program at Resica, a science summer program which ran for many years.
Upon her retirement, Sue immersed herself in a wealth of activities. She loved her daily walks through the nearby trails with Bill and their beloved dog, Princess. She created and coordinated a monthly luncheon of retired teachers from the surrounding area. She enjoyed golfing and valued her time with her golf buddies, especially the weeks in Rehoboth, DE. She volunteered for the local chapter of the Make A Wish foundation, and was able to grant wishes for many children throughout the area. She was also a member of East Stroudsburg Presbyterian Church, where she held a myriad of positions. Sue and Bill loved to travel. They visited many countries and made friends everywhere they went. Sue enjoyed keeping herself socially active, and this is best shown by the numerous close friendships she was able to foster.
As involved as Sue was in everything, her family was her true dedication. Sue truly was their rock and was always the one bringing everyone together. She enjoyed family gatherings and the trips to both Disney World and Ocean City, Maryland with her children and grandchildren.
In addition to her husband and parents, she is survived by her sons, Matthew and his wife, Kristen, of Saylorsburg, and Scott Ellis of Philadelphia. She leaves behind her grandchildren, Jaxon and Jordyn, who were her true passion.
She is also survived by her brother, Jason West, and his wife Carol of Newark, Delaware. She leaves behind several nephews and cousins who loved her dearly.
A visitation will be held on Thursday February 16, 2023 from 9:00-11:00 AM at the East Stroudsburg Presbyterian Church, 55 Smith Street, East Stroudsburg. There will be a memorial service to follow at 11:00 AM with Pastor Nicole Vogel officiating.
In lieu of flowers, memorial donations may be made to the East Stroudsburg Presbyterian Church, 55 Smith Street, East Stroudsburg PA 18301.

One of the strongest women I ever met and had the pleasure to not only meet, but spent a lot of time with. She is an inspiration to all and will be sorely missed. I just found out and it hurts. Love and prayers to the fam.
