Caroline Davies Obituary

DAVIES, CAROLINE (SCHOETTKER) 100 years old, of St. Elizabeth Manor, Bristol and formerly of Laurelmead in Providence passed away peacefully on April 7, 2015. Mrs. Davies trained as a dietician at Kansas State University, receiving her degree in Dietetics and Institutional Management, graduating with a BS in Science in 1937. While at Kansas State she became a member of the Kappa Kappa Gamma Society and has remained a member since that time and received her 75 year pin in 2010. Her continued Kappa involvement has lead to many lifelong friendships. Following her graduation, Mrs. Davies completed her residency in dietetics and institutional management at Cook County Hospital in Chicago after which she became head of Children's Dietetics at St Luke's Hospital in New York City. As a practicing dietitian, she was one of a number of Associate Editors of the Culinary Arts Institute Encyclopedic Cookbook. Mrs. Davies went on to become Executive Director of Dietetics at Passavant Hospital in Chicago where she met her husband, the late John Coonley Davies, owner of the Stillman White Foundry in Providence. The couple lived in the Lighthouse at the end of Nayatt Point in Barrington for 17 years before moving to Beirut, Lebanon in 1963 with their three children. Mrs. Davies describes Lebanon as a great adventure for all, attending local schools, and enjoying the Lebanese people and culture. With great sadness the family was evacuated during the Arab-Israeli War of 1967 and moved back to Rhode Island living in Narragansett and later in Peace Dale. Upon the family's return, Mrs. Davies worked at the Rhode Island School of Design, becoming the Dean of Students in 1974. During this time she was nominated to Who's Who in American Women. She described her association with the school as one of the great joys and satisfactions of her life, stating "I loved every minute of it". Mrs. Davies was active in numerous community and university organizations. In particular she was a longtime volunteer at the International House of Rhode Island in Providence, and served on its Board of Directors for many years. Mrs. Davies is survived by her three children and their families: Sarah Davies Hertfelder and her husband Eric of Bristol, RI; Peter Davies and his wife Melissa of Mattapoisett, MA; and John Davies and his partner, Cynthia Hahn, of Highland Park, NJ. She is also survived by four grandchildren: Samuel of Brighton, MA; Abigail and her husband, Trevor, of Mountain View, CA; Benjamin and his wife, Ashley, of Northborough, MA; and Sarah, and her husband, Euris, of Fairbanks, AK; and three great grandchildren: Griffin, Willow, and Mabel. Remembrances will be private. In lieu of flowers, donations in memory of Caroline Davies may be made to the International House of Rhode Island, 8 Stimson Avenue, Providence, RI 02906.

Sending our sympathies from International House of Rhode Island - she will really be missed here! As is typical in Rhode Island, I feel a full circle relationship with Caroline Davies - having worked at the RISD Library at my first job in Rhode Island when Ms. Davies was Dean of Students, and now, as Director of International House RI, where Ms. Davies contributed SO much of her time and effort - she will be missed!

Sarah and family, I was so sad to read about Caroline in the paper this morning. She had a wonderful life and from what I saw lived life wonderfully!!! My thoughts and prayers are with you.
