Yvonne S. Pauls

1945 ~ 2025

Yvonne Saltas Pauls, a two-time cancer survivor whose courage, strength, and spirit inspired everyone who knew her, passed away on November 9, 2025, following a recent diagnosis of adenocarcinoma lung cancer. Yvonne was born on February 10, 1945, in Salt Lake City, Utah, to Paul G. and Sophie Mastoris Saltas. On June 18, 1967, she married Drew G. Pauls, beginning a beautiful journey that lasted 58 years.

Yvonne graduated from Olympus High School in 1963 and earned a degree in Sociology from the University of Utah, where she was a member of Alpha Phi Sorority. Yvonne helped pioneer the Foster Grandparent Project, working closely with the American Fork Training School, University Hospital, and the U of U's Sociology Department. Her work touched countless lives and showcased her ability to connect with people in meaningful ways.

A Realtor since 1978, Yvonne found great joy in helping families find homes. She specialized in residential properties, and earned her Broker's License in 1986. Most recently she was an Associate Broker with RealtyPath Preferred. She was a dedicated member of the Salt Lake Board of Realtors and the National Association of Realtors for 40 years. She completed her final real estate transaction from her hospital bed.

Yvonne was a devoted member of the Greek Orthodox Church. Her faith was unwavering, and she could be found in her favorite pew on Sunday. She lent her voice to the choir and served as co-chair of the Greek Federation Choir Conference in 1987. She helped with collecting cash and baking at the Greek Festival. Yvonne was active in the Philoptochos Society, Arcadian Ladies, was the current President of the Daughters of Penelope, and outgoing Treasurer of the Pan-Arcadian SLC Chapter #90. She also served on the Youth Board and the Holladay City Interfaith Council; always present in her community.

To her family, Yvonne was the heart of everything. She was a loving, no-nonsense, fiercely supportive mother and a devoted Yiayia. She was a caring and protective eldest sister, a beloved Nouna to her godchildren Kathy, Kim, and JD. Her passions were as vibrant as she was, a Utah Jazz season ticket holder for 40 years, traveling to San Francisco, shopping for the perfect pair of shoes, and "rocking out" from Elvis to AC/DC. She never missed her children's or grandsons' activities, a daily crossword puzzle or clipping an obituary. She will always be remembered for her Greek Yogurt.

Yvonne is survived by her husband, Drew; her daughter, Nicole (David Rebol); her son, Aaron (Jenner Feroah); and her cherished grandsons, George Rebol and Andrew Papadopoulos. She is also survived by her sisters Karen (George) Anastasopoulos, Joanne Saltas, and Diane Saltas, along with many nieces, nephews, cousins, and dear friends. She was preceded in death by her parents, brothers-in-law, and many aunts, uncles, and cousins, each of whom she held close to her heart.

Funeral services will be held at noon on Monday, November 17, 2025, at Prophet Elias Greek Orthodox Church, 5335 S. Highland Drive. Friends may visit one hour prior to the service at 11:00 a.m. Interment will follow at Mt. Olivet Cemetery. Arrangements are entrusted to Starks Funeral Parlor. Drew & Family,
My heart truly aches for your family. Yvonne was such a strong and resilient person, and she faced her battle with cancer with incredible courage. I still remember the first time she became ill-going with Fr. Joachim to visit her in the hospital and donating platelets for her. It´s a memory that has stayed with me. LeiAnn Bathemess
