Marilyn Elizabeth (Liz) Darling 1950 - 2015
Marilyn Elizabeth (Liz) Darling, 65, of Longmont, CO, passed away at her home on December 16, 2015, with her loving husband, Michael (Mike) Anfinson, by her side.
She is survived by her mother, Evelyn Darling, of Salisbury Center; sister, Melaine Paatz and husband, Tom Paatz, of Dolgeville; brother, Donald Darling and wife, Diana Ayers-Darling, of Salisbury Center; brother, David Darling and wife, Deborah Darling, of East Aurora, NY; and a large extended family that reside in upstate NY. Liz was preceded in death by her father, Stewart Darling.
Liz was born on January 29, 1950, in Little Falls, NY, and is a 1968 graduate of Dolgeville Central School. She studied nursing at Plattsburgh State College in Plattsburgh NY.
She worked as a private investigator for 20 years in Coral Gables, FL, and Los Angeles, CA. She moved to Boulder, CO, in 1992. While in Boulder, she worked as an assistant manager at the Flatirons Athletic Club. In 1999, Liz opened an upscale French/American bistro (Le Chantecler) in Niwot, CO, and with her husband, Mike, operated the restaurant until 2007. The restaurant was voted top restaurant in the area for each year that it was under Liz's stewardship. In 2007, Liz and Mike opened a European style wholesale bakery in Niwot, CO, that they operated for three years.
Liz was also active in many community related activities. She was a founding member and director of a non-profit organization that focuses on promoting local arts and artists, including the development of Native American themed tree sculptures, the production of the Niwot Native American Film Festival, the Niwot Backlot Concerts and Movies, the Niwot Rock n Rails summer concert series (2012 and 2013), the Arapahoe Wind River dancers/singers, the Warming of the Hearts annual coat drive, and was a member of the sculpture park development committee.
A private service for immediate family members was held in Lafayette, CO, on Friday, December 18.
In lieu of flowers, the family requests that donations be made to the Liz Darling Memorial Fund, care of Ni-wot Prairie Productions, POB 1053, Niwot, CO 80544. Donations will support the development of the next tree sculpture - Liz's passion - (the Arapahoe Grandmother) scheduled to begin in 2016.
