Eileen COLLETTE Obituary

Age 87 Passed away suddenly after battling Alzheimer's for several years on May 2, 2020 at Johanna Shores Presbyterian Homes, Arden Hills, MN. Formerly of Roseville, MN. Preceded in death by her husband, Louis "Louie". Survived by children Lynne (John), Chris (Becky), Pat (Bernie), Tony (Jodi), 14 grandchildren, 5 great grandchildren, brothers Jerry (Cathy), Roger (Pixie), brothers-in-law Larry (Diane), Bill (Kathy) and sister-in-law Mary (Pat). Eileen was born in St. Cloud, Minnesota. She was one of nine children of Raymond and Theresa Muntifering. Eileen moved to Saint Paul as a young girl along with her sisters to work at St. Joseph's Hospital. She met Louie, they raised a family starting in St. Paul and later moving to Virginia and Pennsylvania. Ultimately, returning home to Minnesota. Mom was by Louie's side throughout his career and commitment to community service. Most notably, as Lady Boreas when he served as King Boreas Rex LIV of the 1990 Saint Paul Winter Carnival. Before Louie's passing, they also enjoyed travelling together and spending time up north at a resort cabin on the lake. Eileen thoroughly enjoyed being a Grandma from having a room decorated solely for the babies when they were little to attending their sporting, theatrical or musical events as they grew older. Christmas was her favorite holiday. Shopping for gifts to ensure that everyone had at least two or more to open, baking dozens and dozens of cookies and decorating every corner of the house. The family wishes to thank the 4th floor staff of the Gables Care Center at Johanna Shores for their compassionate care of Mom over the last several years. Private family services. Interment at Roselawn Cemetery. A Memorial Mass will be held later when it is safe to do so. Memorials preferred to Presbyterian Homes Foundation at preshomes.org or donor's choice.
