My Fond Adieu to the Maître of Georgetown: Remembering Mr. Courbois.
I did not know that Monsieur Mr. Yves Courbois, a gentle soul who brought a taste of France to Georgetown, passed away at 75. Here´s sending my thoughts of comfort during this time and remember, the legacy of his kind soul.
The warmth of Georgetown dimmed with the passing of Monsieur Courbois, the beloved owner of Au Pied de Cochon and Yves' Bistro at Hoffman, another gem that bore his signature touch. Those who knew Monsieur Courbois remember him not just for his culinary artistry, but for the gentle kindness that graced every interaction.
Back then, Au Pied de Cochon was a portal to a world of sophistication and elegance, a haven where a simple high schooler like me could feel like royalty amidst the linen tablecloths and whispered conversations. Mr. Courbois was the silent orchestrator of this magic. He had a twinkle in his eye, a warm smile that embraced you like a hug, and a way of making each guest feel like the most important person in the room.
For me, Au Pied de Cochon was more than a restaurant; it was a portal to my childhood memories of Georgetown, DC. As a wide-eyed teenager, I savored many delicious homemade French dishes from there, the taste still transporting me back to those starry-eyed days. Little did I know then that Mr. Courbois, the kind soul behind the magic was born in Hanoi, the same beloved city that cradled my Eurasian French mother's childhood.
To learn of his passing at 75, a mere whisper against the expected longevity of his countrymen, is a pang to the heart. The news of Monsieur Courbois´ passing at 75 comes as a surprise, a reminder that even lives touched by sunshine have their shadows. Though we mourn his loss, let us celebrate the light he brought to our lives. His legacy remains not only in the exquisite dishes he crafted, but in the warmth, he shared, the smiles he elicited, and the community he so lovingly built around his bistro tables.
Rest in peace, Monsieur Courbois. May the angels in Heaven take over your culinary reins. May your days be filled with sunshine and laughter, your nights serenaded by the clinking of celestial glasses. And though we mourn your earthly absence, we know that your spirit continues to dance amongst the tables, forever the maître of our memories.
Rest in peace, dear sir. You will be deeply missed as your spirit lingers in the air, a gentle reminder of you who made France feel like home, right here in the heart of Alexandria. May he live on in the many hearts he touched.

Thank You for the unforgettable great memories Mr. Courbois. Thank you for employing my father who put food on the table to feed us. He spoke highly of you and had some beautiful stories. I used to go and visit Au Pied de Cuchon as a child when my dad worked there. The backdrop to many of my present day dreams. Imagine walking thtrough Aux fruits de Mer as a child with those huge fish tanks. Mr. Courbois was a col guy and had an awesome smile, Thank you again for letting us be part of your world.
