She completed her undergraduate work at Bluefield Baptist College and Radford University and completed her master's degree through Marshall University. She married John Atkins and together they raised their children in Charleston, WV.

Elizabeth is survived by her brothers, Kyle Jones (Nonia Gay) and Byron Jones, her sister-in-law, Alice Atkins McCoy, and survived by John Atkins, the father of her children, Susan Todd (Kenneth) of Greenville, NC, David Atkins (Beverly) of Salt Lake City, UT, and Mark Atkins of St. Louis, MO. She also leaves behind her grandchildren, Sydney Todd, Jaysa Todd, Kyle Atkins, and Evelyn Atkins.
