Jennifer Lynn Knecht, 51, of Forks Township, PA, passed away Thursday, July 6, 2023, at her home surrounded by her family.

She was born March 15, 1972, in Washington, DC, a daughter of the late Deborah A. (Miller) Graham and George P Knecht. She was a stepdaughter of the late Merle S. Graham.

Jen was raised in Easton, PA, and graduated from Easton Area High School in 1990. She graduated from Northampton County Community College in 1993 with an associate degree. She then pursued a career in chemical engineering graduating from Lafayette College in 1996.

She had always dreamed of being a business owner, purchasing the Snack Bar Tavern in Phillipsburg, NJ, where she was owner and operator for 15 years. Previously, she worked for Minerals Technology as well as Georgia Pacific as an engineer.

She was the family organizer of trips, enjoyed traveling, car shows, playing pool and deep-sea fishing.

Those who knew Jen know that she was a strong-willed, stubborn, bold, and caring individual. She'd give you the shirt off her back if you needed it. She was a light that refused to be extinguished even to the very end.

She is survived by her sister, Dr. Devon Graham (fiancé Christopher Zimmerman) of Washington, NJ and brother, Martin Graham (girlfriend Sabrina Rios-Colfax) of Easton, PA. She is also survived by her aunts and cousins as well as the many close friends she had gained over the years. Her Chihuahuas, Punk and Pita were her babies. In addition to her parents and stepfather, she was predeceased by her maternal grandparents, Russell and Logie Miller.

Services will be held at 2pm Tuesday, July 11th in the Strunk Funeral Home, 2101 Northampton Street, Wilson Borough. Call Tuesday 1-2pm in the funeral home. Burial will be in Northampton Memorial Shrine. Offer online condolences at www.strunkfh.com.

Some of my most fond memories as a child were my sleep overs at Jen's brushing up on our pig Latin.
Times passes and friends move away but you always held a special place in my heart. You were a good friend, Jen.

This is devastating news. I'll remember Jenn's brilliant mind and all the time we spent after work. She often hung out when our band was doing the weekly jams at The Sand Bar. I worked with Jennifer for many years on 13th Street in Easton at Minerals Technologies. When half of our group was suddenly laid off in 2001, Jennifer and I both considered it a welcome relief. She later bought a pub in Phillipsburg that my late father used to go to when I was a child, and several times I went there to have a beer and chat with my former co-worker. Later, we traded an e-mail once in a while and we talked about maybe taking the Munich beer garden tour together one day. Sadly, that trip will never happen. Farewell Jennifer. I am glad I had the opportunity to have known you.
