Jens Hansen Obituary

Jens Haagen Hansen, 68, passed away at Providence Alaska Medical Center after a period of declining health, his wife Annelise was by his side. Born March 19, 1944 in Copenhagen, Denmark to Anna Cornelius Knudsen and Sven Haagen Hansen. He had an early love of cooking. Upon completing his cook's apprenticeship at Hotel Terminus in Copenhagen, he spent a year in France studying and working. After returning to Denmark, Jens served with the Danish Army for 10 months. In 1967 he was offered a job in Alaska at the Hotel Captain Cook and moved to Anchorage in January 1968, where Annelise joined him in 1969, and they married.

Jens worked for the hotel for 18 years with a year off to work on the Trans-Alaska Pipeline. He joined with other Chefs to form the Anchorage Chefs Association, their goal was to improve the quality of meat, fish and produce available to local chefs. His passion for quality food was a constant in his life.

In 1988 he opened Jens' Restaurant in Midtown where he provided good food and fun. For many years he would play CDs in the Bodega for the after dinner guests after cooking both lunch and dinner, later he left the hot kitchen to the younger cooks and worked the cold appetizer station in the Bodega, where he could greet customers and keep an eye on things, his health forced him to leave the running of the restaurant to his wife and capable staff. He trained many cooks over the years and was always proud when they opened their own restaurants or went on to bigger jobs elsewhere. Jens was an active member of Chaine des Rotiseurs and The International Wine and Food Society.

He enjoyed his annual January trips with his wife to wine regions all over the world where he would get inspiration for new dishes for the menu, and find interesting wines for his wine list. His annual trips with "The Butte Creek Boys" were always a fall highlight for him. Most mornings he could be found at Rilley's at 10:00 a.m.

Jens is survived by his wife of 43 years Annelise; his brother Jan Cornelius Knudsen and sister in-law Rosita of Copenhagen, Denmark; his nephew Christian Cornelius Knudsen and wife Zabeth of Minneapolis MN; niece Kamilla Bock and husband Troy of Arlington VA and niece Heidi Trolle-Enevoldsen and husband Niels of Bryrup, Denmark.

Jens will be remembered by his family and many friends for his contribution to the Anchorage culinary scene, his fun loving personality and his love of good food and wine.

A celebration of life will be held at the Captain Cook Hotel January 2nd from 4:00 to 7:00 p.m.

Arrangements were with Janssen's Evergreen Memorial Chapel.

Jens Haagen Hansen left this physical world in December but he left us with a taste of exquisitely prepared food, paired with wine, and a generous spirit. At our request, Jens came to Juneau from Anchorage starting in 1998 for four years -- to help the Juneau Arts and Humanities Council raise much needed funds with a several course dinner: Jens in Juneau. We billed him as a celebrity chef from “the big City” and he enjoyed that role.

I picked him up at 9:20 pm Thursday April 22, 1999 and took him to the Baranof Hotel (they comped his room as a donation, thank you). Jens had prepared his own meal (hates airline food) complete with appropriate wine and feasted as he flew down. I can only imagine what the guy next to him thought as he was served his dinner on a foil covered tray, and Jens reached into his basket and brought out his seared duck with fois gras and bottle of wine.

The next day my diary noted that I worked from 9 am until 11 pm. Jens worked even longer. For free. To help a non-profit arts organization that contributed to the Capital City. He did that again for at least three more years.

I shopped with Jens, learning how he appraised freshness in all products, and how quickly he made decisions, adapting the menu to what he could get in Juneau that was the best quality…then it was off to the kitchen. The Fiddlehead, Silverbow, Twisted Fish, and Sandpiper Restaurants all generously helped JAHC present Jens in Juneau. The people who allowed us into their space were instrumental in our successful fundraising. Without them it simply would not have happened. Chef Stefanie helped Jens a great deal as did Doug Ahrens from the Sandpiper and Ron Burns from the Twisted Fish. John DeCherney, Specialty Imports helped with all the wines. Alan and Monica Gross and later, former Attorney General Greg Renkes and his wife Maureen helped us by hosting the cooking class that Jens taught. Jens worked ceaselessly, doing a major part of the preparation alongside the chefs who were very thrilled to be working with him. He sipped beer throughout the day and when he stopped for a snack I learned how he was always interested in food; as a young boy he would discuss and plan the dinner menu with his grandmother and then go shopping for the meal.

It's difficult to describe someone who is larger than life, and lives life to the fullest. Jens was very much in the present; he worked hard and played hard and gave so enthusiastically. Many people knew him much better than I did. But I will always remember how generous he was, how fun he was to be around, how he smelled of after shave lotion, wore those crazy glasses, and had to play his requisite "LAYLA" at 10 pm -- and how much he helped the Juneau Arts and Humanities Council.

In Memoriam: Jens' by now almost world famous Pepper Steak:
Trim beef tenderloin cut into steaks. Press cracked pepper into steaks, pan fry in hot olive oil, flame with aquavit. Remove steak add seasoning salt, deglaze the pan with heavy cream, demi glace and green pepper corns, adjust seasoning, remove from heat, beat in butter and pour on steak.

Let us all enjoy life as much as Jens did!

When Jens was executive Chef at the Captain Cook he introduced me to some of the most memorable culinary experiences of my life. I will always remember how gracious he was in presenting something new to my then primitive palate and how delighted he would be in sharing!
At the Bodega I can recall some dancing on the bar… only Jens could have made that happen. Thank you for the many wonderful memories of a time that can never be repeated, nor in some cases, should it! You will live on in the collective Anchorage memory and all who ever experienced your hospitality and art will long for another taste - until we meet again.

We met Jens and Annalise just over 5 years ago. We went to their restaurant for the first time at lunch and had the chicken fried steak, they practically had to roll us out! Jens has been our favorite restaurant ever since. We will really miss his gruff voice and laughter, always a smile when he greeted us. I always felt a warm welcome when they hosted the annual Reeve PXS parties in their home each year when Annelise was the Director of our department. The spiced wine was powerful (lol) and we enjoyed Christmas music, food and conversation with coworkers and their spouses.
