Nick....
You lucky dog! You will be met at the Pearly Gates by "The Love Of My Life", my Wife Kelly. Through all of her struggles, battles and illnesses, you were always there for her & me. We both loved you very much. Those special meals that you made for me to bring to her bedside, always gave her the feeling of getting a home cooked meal designed by Nick, just for Kelly, with lots of Love.
Even when Kelly got her Angel Wings, there was only one person that we could think of to prepare that last special meal for our family and friends at her Funeral. You and Mango made it all just right. (However, I know that Kelly was assisting you in the kitchen that day.)
You my friend, were Papa's #1 Salesman! Sales and Service Customers that were afraid to come into a car dealership, felt like guests of the family when they sat down at Nick's Diner. You treated the CEO's and the Sewer worker's with the same level of respect. Nothing really defined Welcome Home like your Diner. (I'll miss the smells of those fresh baked cookies when you came into Papa's Showroom!)
You were a great Father, Uncle, Brother, Son, Soldier, Cook, Psychiatrist, TV character, Comedian, and Friend to everyone. You held us all together.
No one will ever be aware of just how much you did for our Military. You literally served God & Country! And one of the special things about you was that you expected nothing in return.
They say that a loyal dog will just keep running and running until he can run no more. God bless you for always running with such love and loyalty. You always had a Huge Heart!
Give Kelly a BIG HUG and KISS from me. And a "very small" plate of meatloaf from you.

We were very saddened to hear of Nick's passing. We always enjoyed our encounters with Nick over the years, whether at the deli or making arrangements for his generous donations of food to benefit various causes here in town. Nick was always gracious and friendly, and never tired of speaking about his beloved family. We're certain that Nick's generous spirit inspired many others; and that's a fine legacy to leave.

To the Vita Family,
I am so sorry for your loss. I worked with Nick at Vita's as a job coach for developmentally disabled employees. Nick always demanded the best from us, but he was fair, kind, and always made us laugh. Working with him was always a pleasure. Nick also catered my wedding several years later and will always be remembered by my family for the great food his restaurant provided. I have seen Nick from time to time over the years and he has always greeted me with a smile and a hug, and a genuine interest in how I was doing. Nick was a great man, and he will be missed. Our thoughts and prayers are with the Vita family.

Eventhough I only knew Nick for a few years I can honestly say that I have never worked with a more caring and generous individual. Nick cared about everyone he came in contact with and would give the shirt off his back even if it was his last one. I will miss our daily conversations about the Red Sox and I will think fondly of him each time I walk by the diner. My deepest sympathies go out to Barbara and the rest of Nick's family.

I just found out about Nick's passing and I'm in shock. He was such a great person and will be missed as much as everyone in Bristol missed Vita's when it closed. One thing is for sure and that is that everyone in heaven is eating better now. God Bless.....

"Morning Nicholas", Well I know you are up there looking down on all of us...You are able to see what so many of us are unable to put into words, just how much we miss you, how very sad we are, how much in shock we are. I take comfort in knowing that you do know, and you are listening. For anyone out there who has not heard some of your funny sayings, I will share just a couple of my favorites: "I know I was born at night...But Not LAST night". (my favorite). "I only look old and stupid". You showed me the non-verbal "Crocodile tears" gesture, and the "world's tiniest violin" gesture. You always had the appropriate words for the given situation. Soups!! Well, you were the soup Master without a doubt!! Oh Nick, we are so lucky to have had you as part of the "Papa's" family for the last two and half years! I will never forget your words of advice over a cup of tea with 2 tea bags and rye toast at Papa's, and your sausage and peppers that were, by far, the best!!! You helped pick me up when I was down and you always had a joke or two to help me through the day. You are deeply missed, yet I am thankful that your path crossed mine.

poppy I miss you and love you and I will never forget our trips to the bakery eating a half of pizza and bread on the way home, i will never forget fishing and talking and you always being there for me no matter what, our morning eats in rhode island while everyone else was asleep. or how we would sneak snacks through the window when i was a little girl.
