With hard work and determination, Arnaldo opened his first restaurant in Eunice, New Mexico, where he lived for several years. Later, he established El Aguaje in Midland, a place well known for serving the best and biggest burritos in town. Through his restaurants, he built not only a livelihood, but also countless friendships and memories.

To his customers, he became known as Arnie. He was not only the person that they saw when they stopped in to get some delicious food, he got to know each one of them personally and built up friendships with them over the course of days. His passion was cooking for others. He told stories of his childhood through each recipe that he shared with others.

Arnaldo's true joy came from being surrounded by family and friends. He loved gatherings where his laughter, jokes, and singing lit up the room. His legacy is not only in the meals he served, but in the warmth and happiness he shared. His memory will live on in every smile and story that recalls those good times.

Arnaldo loved to make others happy in his day to day life as well. There was rarely a time when he wouldn't talk to people he didn't know or crack a joke to break the silence. Getting to know people was one of his favorite hobbies. He got to know so many people that almost every store he went to he recognized at least two or three people there.

While Arnie will be greatly missed, it's his humor and kindness that was taken too soon from the world. Making even the most stone hearted people laugh was something that he was always proud of. He hoped to give to others more than to take more than he deserved. Great people are often the hardest to let go of.

He is preceded in death by his beloved parents Julián and Pilar Carrasco. Arnaldo is survived by his children, Stephanie, Michael, Bryan, and Karyme; his siblings, Dora Ma. Carrasco Galindo, Luz Marina Bustamante, Manuel Antonio Carrasco, Julián Carrasco Jr, and Arnol Carrasco; his grandchildren; and numerous nieces and nephews who will cherish his memory.
