Obituary for Eileen M Eacker: September 14, 1932-February 7, 2026

Eileen M. Eacker, 93, passed away peacefully on February 7, 2026. Born above the family pub, The Bombay Grab, in Bow, London, UK, on September 1, 1932, she was the daughter of Stanley and Edythe (Shakespeare) Middleton. Eileen grew up in England, with her early years being in London until the start of World War II. The women of the family left the city of London for safer housing in the English countryside. Eileen shared stories of times in air raid shelters, blackouts, and ration cards. Eileen attended several different schools, including a secretarial training for secondary school. At 15, she began her first employment as a copy typist.

In 1949, Eileen and her mother Edythe, immigrated to the United States to be closer to her sister Phyllis and family. They crossed on the Queen Elizabeth II from Southampton to New York City, settling with family in Fort Plain, NY. With the exception of a few months in Texas, Eileen would spend the next six decades in the Fort Plain, NY area. Eileen continued her secretarial work, first with the former Sealtest Ice Cream plant in Fort Plain, and later working 34 years for the Beech-Nut/Life Savers company in Canajoharie, NY.

At 23, Eileen met her future husband, Adelbert Eacker Jr. They were married on September 28, 1957, at the Fort Plain Reformed Church. Together for 62 years until Junie's death in December 2019, they devoted their time, energy, and love to raising their family, spending time with extended family and friends, and were faithful members of the Fort Plain Reformed Church, providing service to others. Eileen sang with the church choir for many years, as well as serving as an Elder on the church consistory, and providing countless hours in service to others. Eileen and Junie enjoyed spending time by the ocean, frequently visiting York, Maine, Cape Cod, and Myrtle Beach. Eileen's hobbies included gardening, painting, and baking. She was an avid reader as well.

Eileen is survived by her sister, Phyllis Phillips; her children, Jeanne Eacker, Edythe (Paul) Schultz, and Steven Eacker; her grandsons, Andrew (Jenny) Oh-Schultz, Tyler (Kaitlyn) Schultz, and Cameron Schultz; and her cherished great-granddaughter, Auden Schultz, as well as many nieces and nephews.

She was predeceased by her parents and her husband.

A service of remembrance will be held on Saturday, February 14, 2026, at the Fort Plain Reformed Church. The family will receive friends and relatives from 10:00 am to 12:00 noon prior to the start of the funeral, beginning at 12:00. Burial will be in the spring at the Fort Plain Cemetery. In lieu of flowers, memorial donations may be made to the Fort Plain Reformed Church,165 Canal St, Fort Plain, NY 13339.
