He was a wonderful husband, father, grandfather, brother, uncle, son, and friend. Mitch married the love of his life in 1983 and adopted Alicia as if she was his own. Soon followed were his two daughters, Kendra and Karaley. He worked for Target Corporation for 32 years and during those years he spent 10 years executing his passion for Halloween running Haunted Acres. If you were looking for Mitch, he was always busy working on some sort of project. He was very knowledgeable, funny, stubborn, compassionate, and family-oriented, and when something needed to be fixed, he was the go-to guy.
Mitch had three grandchildren whom he adored with his whole heart and his entire being. He was the family planner and the glue to the family to initiate anything that needed to be accomplished. His family will deeply miss him and cherish the memories that they have made with him.
Mitchell is survived by his beloved wife of 40 years, Vicki Knoll; 3 daughters Alicia Knoll of Eagan, MN, Kendra (Aaron) Louks of Lakeville, MN, and Karaley (Chris) Ivey of Prior Lake, MN; grandchildren: Drew "Wesley", Eliana, and Spencer; sister: Cynthia Knoll; brothers: Marshall Knoll, Mike (Bonnie) Knoll, Monte (Lesa) Knoll, Mace (Dung) Knoll, and Morgan (Mari) Knoll; many nieces, nephews, relatives, and dear friends. He was preceded in death by his parents Frank and Bette Knoll and sister Cassandra Kaufman.
The family wishes to send a special thank you to the first responders of Eagan along with the staff at HCMC for their care and compassion.
A Celebration of Life for Mitchell will take place on Wednesday, June 14, 2023 from 1 PM-4 PM at SUMMIT Funeral and Cremation, 6415 Carmen Ave. E, Inver Grove Heights, MN.

To the Knoll family, the entire Target Store Design team is saddened to hear of Mitch´s passing. He was a valued member of the team for decades and helped Target deliver on hundreds of new store & remodel designs that millions of people shop at everyday. Personally, I remember many stories Mitch shared about his Halloween passion & family. It was fun to hear and you could see how proud he was of both. He will be missed.
