Since retiring from club management, I've lost contact with a lot of former friends that I knew from clubs. Yesterday while in church, I was saddened to learn of Patrick's death. I first met Patrick in 1985 when I was invited to have Thanksgiving Dinner with the managing partner at Hollytree Country Club. After informing me that I had been selected as the new GM, he called Patrick over and introduced my wife and me. During my first year there, Patrick was the executive chef, his wife Annick worked in the accounting office and his two daughters Nathalie and Carol worked the reception desk. Great family!!! The saddest day while I was at Hollytree was finding out Carol had been killed in auto accident the night before. The family was always very special and when I became the GM at Pinecrest, Patrick was one of the first people to come to congratulate me. Like when he owned Le Bistro, he invited my wife and me out for a delicious dinner at the Cherokee Club. One of my favorite memories of Patrick was when we went to Dallas to a club management meeting. Just as we were getting into the city, I asked him if he would like to stop at McDonald's for something to eat. In his French accent he said. "McDonald's???" When I said yes, it was like I had insulted him. He said, "No, I want to stop at a bistro." He told me where and we did. It was much better than McDonald's. He was a great guy and will be missed.

I was a sous chef for Patrick at Holly Tree CC in Tyler in 82. He was great to work with and for. That was a special time and I remember how much fun it was to work there, thanks to him. I think of him and the advice he would give to us young chefs. He'll be missed but always thought of fondly.
