Peter Jacoby Obituary

Obituary published on Legacy.com by Schaetter Funeral Home - Fredericksburg on Dec. 27, 2025.
Peter James Jacoby, age 78, passed peacefully into eternal rest on Christmas Day, December 25, 2025. Peter's life was a gift to all who had the privilege of knowing him. His life was one of generosity, resilience, and deep care for those around him. His memory will continue to bring warmth to the hearts of his family and friends for all of time.

Peter Jacoby was born on January 3, 1947, to Roy Ellis and Erna Emma Besier Jacoby. He was recognized as the first New Year's baby of Gillespie County, a distinction marking the beginning of his purposed-filled life. He was baptized just 5 days later on January 8, 1947, at St. Mary's Catholic Church.

As the second eldest son and fourth of eleven children, his character was shaped by his life growing up on the Jacoby ranch. Moments of childhood adventures, joyful antics and light-hearted mischief bonded him closely with all of his brothers and sisters creating treasured memories that remained close to his heart forever.

He received his early education at Stonewall 1st-8th grade, then St. Mary's as a Freshman, and graduated from Fredericksburg High on May 27th 1965. He demonstrated notable strength in mathematical reasoning and analytical thought. Alongside his academic pursuits, Peter was actively involved and competed in the 4-H club and FFA. Following high school, he began his studies at Tarleton State University, enrolling in the engineering program in keeping with his aptitude for mathematics and problem-solving.

On April 26th 1967 Peter answered the call to serve his country by enlisting in the United States Marine Corps. He served honorably during the Vietnam War until February 4th, 1971, attaining the rank of Corporal. Throughout his service, he exemplified dedication and discipline, earning four medals and achieving the rifle expert designation-distinctions that reflected both his commitment to excellence and his steadfast character.

After Serving in the Marines, Peter found his calling in carpentry, perfecting his skills alongside his brothers. He went on to hold lead positions in Johnson City, helping to build the LBJ State Park & Historic Site and Behrend's Construction in Stonewall, building new homes from the ground up.

In 1976, he met his wife and children at Luckenbach, marking the beginning of a lifelong journey grounded in love, commitment and family. By 1978, he relocated to Houston to raise a family and work alongside his brother Robert, framing new homes.

When the opportunity arose with the City of Houston, he seized it, testing at the highest level to gain entry and earning supervisory roles in both the Bridge and Building Inspection divisions. He later became superintendent for the Parks Department, dedicating 23 years to public service until he retired in 2003. Even in retirement, Peter stayed busy, lending a hand wherever work needed doing. He played a vital role in restoring the historic Nebgen School of Fredericksburg and devoted time to repairing and caring for his childhood home, a project very close to his heart. Those who worked with Peter consistently spoke highly of him and valued his leadership, integrity, and kindness. He was known for his attention to detail and his steadfast belief in "building it right the first time."

Beyond his work, Peter enjoyed a good crossword puzzle, a game of dominoes, or a round of Scrabble. A true craftsman at heart, he found joy and fulfillment in winemaking, repairing vehicles, and repurposing copper, metal - always seeing potential where others saw scrap.

Peter's most lasting legacy was the love, kindness, and devotion he gave to his family. He often told his wife that his happiest moments were raising his children and being a caring, devoted OMPA to his grandchildren. His love for children was at the very center of who he was. As "The Dad", he was the BEST Papa Ever - always ready with a hug, a story, or a word of encouragement. As an OMPA, he cherished every moment with his grandchildren, offering guidance, warmth, and unwavering support. To his nieces and nephews, he was affectionately known as "Uncle Calf-Rope," a name that reflected his playful spirit.

Peter was a man of quiet strength and unwavering devotion, always going above and beyond for the people he loved. He carried himself with honor and integrity, devoted to his family, his work, and his community. Known for his kindness and generosity, Peter had a gentle way of making everyone around him feel valued and cared for. His life was not defined by grand gestures, but by steady acts of love, responsibility, and selflessness that left a lasting impression on all who knew him. He was the glue that held his family together and a steadfast rock in times of challenge. To know Peter was to feel his warmth; if he could help, he did-always with a cheerful heart and a giving spirit.

Peter James Jacoby will be remembered for his intellect, sense of duty, and the values shaped by faith, family, and community. His life stands as a testament to service, perseverance, and integrity - and a well-timed joke leaving a lasting legacy in the lives of those who knew and loved him.

Peter passed into the arms of Heaven, joining his parents, Roy and Erna; his beloved brothers Robert, Thomas, Jake, and Andy; his nephew Nicholaus; and his in-laws Charles Jenschke and Fran Jacoby.

He is survived by his wife, Jean Jacoby; his children, Christopher and Jennifer Jacoby; son-in-law Richard Gonzales; grandchildren Samuel, Hannah, Joshua, and Jasmine; brothers Louie, Pat, and Ross Jacoby; sisters Jo Jenschke, Barbara Jacoby, Carolyn and Curtis Garner, and sister-in-law Holly and Bryan Wilson.
