Kornerstone Funeral Directors - PlainviewRita Gayle Coffey, 77, of Lubbock, Texas passed away on Monday, September 1, 2025 in Lubbock, Texas. A funeral service will be held at 2:00 P.M. on Saturday, September 6, 2025 at Kornerstone Funeral Directors Chapel with Jim Brewer of South Plains Church of Christ in Lubbock, officiating. Burial will follow at Plainview Memorial Park in Plainview, Texas.
A visitation will be held at 1:00 P.M. on Saturday, September 6, 2025 at Kornerstone Funeral Directors Chapel.
Rita was born on August 25, 1948 in Muleshoe, Texas to Joe Kenneth and Freda Dillard. After the death of her father, Rita and her family moved to Plainview, Texas. In 1952 her mother married W.T. “K” Jones and he adopted Rita and her sister. She graduated from Plainview High School in 1966. After graduating she attended Lubbock Christian University for two years. She then moved to Arlington, Texas at the age of nineteen and worked for Roy Rogers sandwich shop and walked to work until she saved enough to purchase her first car. Rita worked for Kawasaki Motors and then Texas Air before moving to Houston to work for Continental Airlines.
She then took a job at Woodlands Country Club in The Woodlands, Texas. There she worked as a waitress and then transferred to the accounting department. She later moved to the Country Clubs Pro shop where she was a merchandiser. After The Country club was sold she moved back to Lubbock to be near family. She then took a job at Lubbock Country Club in 2009 and worked there until 2021. Rita was a longtime member of the Church of Christ.
She is preceded in death by her father, Joe Kenneth Dillard; her mother, Freda Jones and her adoptive father W.T. “K” Jones and a brother, Curtis Jones.
She is survived by a brother, Steve Jones of Childress, Texas; a sister, Sandra Perkins of Lubbock, Texas; ten nieces and nephews and fifteen great grand nieces and nephews and two great great grand nieces and nephews.
