Esther Weikel Obituary
Esther M. Weikel, 80, from Easton, Pennsylvania, passed away peacefully July 7, 2025 in Fort Collins, Colorado. Born on October 3, 1944 in the small town of Pottstown, Pennsylvania, she was the daughter of Grace (Pensel) and Harry Sparks. She grew up in a home that valued faith and family. During her senior year of high school, she moved to Philadelphia. Following graduation and on a quest to find her place in the world, and not being afraid to try new things in life, Esther briefly served in the Women's Army Corps and worked for a time as a CNA at a children's hospital.
Esther married Edwin M. Weikel in Easton, Pennsylvania. They made their home in Easton where Ed built his insurance business downtown in Centre Square. Prior to becoming a mother, and while Ed was building his business, Esther worked at The Carmelcorn Shop downtown. She then stayed home to raise her daughter and later worked with Ed at the insurance agency for 16 years as his secretary and right-hand gal. Ed and Esther were very close and loved one another dearly. They had celebrated 42 years of marriage at the time of Ed's passing in 2007.
Even when Esther was a stay-at-home mom, she was always on the go. She was quite taken with city life, referring to Easton as her "Little Apple," and had become accustomed to public transportation while living in Philly. As a result, she never drove. Instead, she took the LANTA bus all around town, wherever and whenever she needed to go. She even had her distinct quick 'get to the bus' walk. She was a people person and loved to be out around town.
Esther was a great listener and rather enjoyed conversating, especially with folks she knew. She was gifted with the ability to write inspirational words full of gratitude to those she loved. She was incredibly sharp and had a keen memory, always catching the details, no matter how small. She was accurate and efficient in her work. Esther loved animals and was kind to all critters. She loved nature and savoring the simple moments in life. She liked classic movies and dainty things. She baked pies with fresh fruits harvested from Ed's garden and looked forward to her daily tea. Many dreams came true for her; moving to Colorado to be closer to her daughter Pamela and family while becoming a grandmother which filled her heart with overflowing joy. She was always planning the next family celebration. She will be dearly missed.
Services will be held Saturday, July 19th at 10 a.m. in the Strunk Funeral Home, Inc., 2101 Northampton St., Wilson Borough. Visitation on Saturday from 9 to 10 a.m. in the funeral home. Procession to Committal Service will follow to Northampton Memorial Shrine, Easton. In lieu of flowers, consider a donation in Esther's memory to The Center for Animal Health & Welfare, 1165 Island Park Road, Easton, PA 18042.
