Rose Pinho, 88,(Cataldi/Kopesky), 88, passed away peacefully on August 2, 2025 in Whitehall, PA. Born on July 22, 1937 in Newark, New Jersey, Rose lived a life rooted in faith, family and joy of sharing her love through food.
Rose was the daughter of the Late Amori Cataldi and Dominica Vicini. She grew up in a close-knit family alongside her brothers Morris and Angelo Cataldi, as well as her twin sister Virginia Melanson. Her early years in Newark were shaped by strong family bonds and traditions that would remain central to her life.
A gifted cook with a passion for Italian cuisine, Rose found joy in preparing meals that brought people together. Her cannoli's were legendary among those who knew her, and every Easter she lovingly baked traditional Easter egg bread--A cherished ritual that became a hallmark of her hospitality. Her culinary talents led her to a fulfilling career as a caterer, where she shared her skills and warmth with countless others.
Rose's spiritual journey was an important part of her life. Although she was raised in the Catholic tradition, she later became a devoted Baptist, finding strength and purpose in her faith throughout the years. She was a devoted member of Calvary Baptist Church for many years.
She experienced both great joys and profound losses in her lifetime. Rose was predeceased in addition to her parents, her first husband Ronald Kopesky and also her second husband Francisco Pinho; sons David, Ronald and Joseph Kopesky; brother Morris Cataldi and her twin sister Virginia Melanson.
She is lovingly remembered by her daughter Carol Altman, son-in-law James; daugher-in-law Dorene Kopesky; brother Angelo Cataldi. Her legacy continues through her grandchildren: William (Jaclyn), Jesse (Samantha) and Kristin Altman; Bryan (Dana), David (Emily) Kopesky and Kimbery (Joseph) Edinger. Rose also leaves behind great-grandchildren Daniel, Conor and Jordan Kopesky; Lucas and Sadie Altman; Joseph and James Edinger; as well as step-great-grandchildren Michael Insalaco, Paul and Anthony Devlin and Alora Rindock and a host of other extended family and friends.
Rose's life was one of resilience, devotion and generosity. May her memory bring comfort to those who knew her. In lieu of flowers the family requests donations to the
ASPCA made in her memory.
Funeral Services will take place in the Funeral Home on Friday August 22, 2025 at 11:30AM under the direction of Pastor Larry Byrd of Calvary Baptist Church. Visitation begins at 10AM. Interment will immediately follow services in Northampton Memorial Shrine.
