Carol Grieger, 89, Amenia, ND went home to be with the Lord on Wednesday, January 1, 2025 at Sanford Hospice House on Broadway in Fargo, ND surrounded by her loving family.
Carol Irene Stangeland was born on October 30, 1935, in Fargo, ND, to Arne and Marian Stangeland. She spent her childhood on the family dairy farm east of Argusville, ND, and attended the Sheyenne Country School, a one-room schoolhouse, until the 8th grade. Carol graduated from Oak Grove Lutheran School in Fargo in 1953. She earned her nursing degree from St. Luke's in 1958 and initially worked in the O.B. department until December of 1959. In January of 1960, Carol ventured to New York City to work in the delivery room at Elmhurst Hospital. She also worked in Chicago before returning to North Dakota.
Carol met her husband to be, Dallas Grieger, at the Island Park roller-skating rink in Fargo in 1959 and they were married on Nov. 25, 1960 at Pontoppidan Lutheran Church, in Fargo, ND. They settled on a farm near Amenia, where they farmed, raised livestock, and nurtured their five children. In 1978, Carol resumed her career as a registered nurse, working at the Arthur (ND) Good Samaritan Center for 22 years.
Carol, the beloved family matriarch, was a woman of many talents and passions. She found immense joy in quilting, sewing, cooking, and baking her family's favorite "buns." Carol was deeply devoted to her faith, attending Bible study regularly and reading her Bible with dedication each day. Her community involvement was vast, with active participation in the Garden Club, Red Hats, Christian Women, and Homemakers.
Carol loved nurturing her garden, preserving her homegrown produce, and tending to her vibrant flowers. She also had a passion for exploring new places, taking numerous bus tours across the United States. Alongside Dallas, she relished attending bluegrass music festivals in North Dakota and Minnesota.
Known affectionately as Grandma Carol, she cherished every moment spent with her grandchildren, delighting in watching them grow. Following Livia's birth, she moved in with her daughter Kari to assist in caring for Livia. She did the same when Kari's triplets were born, residing with Billy and Kari for several months. Grandma Carol traveled many miles to visit, babysit, and play with all her grandchildren, creating precious memories along the way.
She is survived by her five children, Jeff (Darlene) of Erie, Joel (Kari) of Arnegard, ND, Karen (Mike) Fosberg of Fargo, Kari (Billy) Pfingsten of Davenport, ND and Kristi (Ron) McCloud of Halliday, ND; grandchildren, John (Krystal), Tiffany, Ean (Megan), Peter and Trever Grieger, Jacob and Sara Grieger, Livia, Brodie, Joshua and Avonlee Pfingsten and Kelsey and Ben McCloud; sister, Shirley Gunderson of Bejou, MN; sisters-in-law, Ethel Grieger of Fargo, Sylvia Stewart of Minneapolis, MN and Shirley Stangeland of Puyallup, WA; and several nieces and nephews.
