Frederic Delaire
A man with the greatest heart, care, kindness and all applicable adjectives, left this world on Sunday, April 27, 2025, after a 5 years long, fierce battle with a very aggressive Cancer. He was 52 years old.
My Fred, a genuine man with a heart of gold, a big kid still, stuck in the 80's; at least music and movie wise. Loved Arcade games, fishes, Jeep, his hometown Agen in France and their rugby team, Heavy Metal music (Metallica, Scorpions ), French rock music, the occasional ABBA; Star Wars, The Goonies, The Good, The Bad and The Ugly He loved however to stay put at home, with us, Deborah and Stella, our daughter. When we were going out, it was to see and experience fun stuff, traveling to Orlando, playing all the Pirates Courses Mini golf, eating at Cracker Barrel, road tripping to Georgia and staying in a cabin away from people, taking his time to enjoy life; when he wasn't working as an Executive Chef in some of the greatest hotels in Miami Beach; The National and The Loews Hotels.
We met in 2000, if not 1999 and our first exchange of words were not that lovely. We were both working in a small restaurant in South Beach, he was the Chef and I was restaurant manager. When he went on to become Exec sous at The National hotel, it didn't take long for me to follow him there as a Catering manager in charge of weddings we were both married to other spouses at the time and still not really liking each other but working together, the French connection and lots of laughter, our hearts were speaking to each other.
"Long story short cut" like he would say, in July 2004 he told me that he had feelings for me, that he knew I was married but that if he didn't tell me, he couldn't take it anymore. It took a little bit for my feelings to reveal itself, as I was also starting to fall in love with Chef Fred. 2004 we started secretly dating, someone found out and it was ok, staff was happy for us.
2007 we got married at the Miami Beach City hall, before going to work.
2010 first home
2011 our daughter was born.
After 8 years at the National Hotel, the next 14 years were at the Loews hotel, where his Michelin Star culinary experiences that he acquired working at the Eiffel Tower restaurant amongst other starred locations in Europe, were in full drive as Executive Chef.
You cooked your heart out for thousands of guests, from the rich and famous to the lovely tourist coming to visit South Beach. After all that, your favorite dish was Merguez and fried eggs. You created an environment where it was fun going to work, where work was not work anymore but a pleasure. Yes, very long hours kept him from being home with us, but that's what we were trained for. Still, Fred made the best of both worlds. He was a man that always see the good in people, even if he didn't like you that much,
there always something that had to be good. "The Agent" always fighting for the underdog and looking out after people, placing them with other jobs, even and especially if they were not at the Loews any longer.
I don't want to speak about what started in 2020 and until today because I don't want Fred to be known as fighting that disease, for sure he fought but, that was not who he was.
I will miss you, love you forever.
