Hubert Eubanks Obituary

Hubert Dwain “Red” Eubanks, age 82, passed away peacefully on August 16, 2025, in Baton Rouge, Louisiana. Born on November 25, 1942, in Lucedale, Mississippi. Red moved to South Louisiana in 1972 where he lived a full and vibrant life marked by hard work, deep family ties, and an unwavering love for people.

Red was a man of many talents and tireless dedication. Alongside his beloved wife, Susan Hoover Eubanks, he owned and operated Red’s Restaurant in Head of Island for an impressive 45 years. The restaurant became a cherished local institution—a place where community members gathered not only for good food but also for the warmth and hospitality that Red so naturally extended. In addition to his work in the restaurant business, Red spent many years in the construction industry as both a Boilermaker and Iron Worker. His strong work ethic and commitment to excellence were evident in every endeavor he undertook.

Family was at the heart of Red’s life. He is survived by his devoted wife of 52 years, Susan Hoover Eubanks; daughters, Wanda Eubanks and Polly Eubanks; son, Bryan Eubanks and daughter-in-law Terra Eubanks; and four grandsons—Beckham, Kaplan, Sullivan, and Anderson Eubanks—who brought him immense pride and joy. Red especially treasured time spent with his grandsons, creating memories that will be cherished by all who knew him.

He is also survived by his sisters Sally Ezell, Billie Tilley (Marvin), and Charlotte Langley; sisters-in-law, Linda Hoover, Sandra Miles and Pam Richardson; as well as many beloved nieces, nephews, and extended family members, friends and employees who held a special place in his heart.

Red was preceded in death by his parents, William and Jesse Eubanks; brother, Gene Eubanks; sister, Dortha Estis; in-laws, Valmond and Leona Hoover; brothers-in-law, Bryan Hoover and Johnny Hoover; a niece, Brandy Hoover and a great-niece, Avery Claire Nace.

A man known for his friendly nature and outgoing spirit, Red truly “never met a stranger.” He had a gift for conversation that made everyone feel welcome. Whether chatting with customers at the restaurant or catching up with friends, old and new, he found joy in connecting with others. His passion for college sports was another defining aspect of his life—he was an avid supporter of Alabama Football and LSU Baseball.

In his final year, Red received exceptional care from Nancy Keller and the staff of Caring Angels. Their kindness brought him much joy during this time, and their presence was deeply appreciated by the family.

Red’s legacy lives on through the countless lives he touched—with a warm smile, a hearty laugh, or simply a shared moment over sweet tea at the restaurant. His memory will continue to bring comfort to those who knew him. A visitation will be held on August 21, 2025, from 9:00 AM to 11:00 AM at St Stephen the Martyr Catholic Church with services beginning at 11:00.
