Joseph F. "Joe" Eiberger

1954 - 2025

In Loving Memory of Joseph F. Eiberger, known lovingly as "Joe", 70, of Stanberry, MO, passed away Friday, September 5, 2025 at a St. Joseph, MO hospital.

Joe was born on December 1, 1954, in St. Joseph, Missouri, to the late Balthus F. Eiberger and Marguerite (Kneib) Eiberger.

On October 9, 1976, he married the love of his life, Vickie Lou (Gage) Eiberger. For 49 years, Joe and Vickie built a home filled with love, humor, and the kind of loud talking and laughter that only comes from a big family. Together, they raised six children, who were his greatest pride: Ryan Eiberger and spouse Christa, parents to Aaron, Cadence, Paisley, Sadie, Blake, and great-grandson Tanner; Nicholas Eiberger and spouse Kelly, parents to Emersyn, Noah, and Annika; Stephanie (Eiberger) Cameron and spouse James, parents to Gavin, Eva, and Quincy; Quentin Eiberger and spouse Shelby, parents to Roman and Lincoln; Jordan Eiberger and spouse Hannah, parents to Gia, Kyah, and Navie; Aaron R. Eiberger, who preceded him in death and is remembered with love every single day

Joe also leaves behind his beloved siblings, Philip Eiberger of Missouri and Maryann Eiberger of Kansas.

He grew up in Stanberry, Missouri, graduating from Stanberry R-II High School in 1972 and later attended a short time at Northwest Missouri State University. But his true education came from the land-muddy boots, early mornings, and the wisdom only farm life can teach. Joe was a lifelong farmer with a passion for cattle, livestock, and the simple joys of fried chicken and sweet tea.

Joe was many things: a fence fixer, a farmer, a storyteller, and a steady source of advice. He never let a day pass without calling one of his kids to share something he had read, heard, or remembered. And he never stopped asking, "Where's Vickie?" Or "Where's your Mother?" because she was his heart, his compass, and his partner in everything. If Vickie cooked it, Joe made sure everyone knew it was the best meal they'd ever eat.

He was the life of the party, whether the gathering was a crowded room, the farm, or just the family at the lake. Joe knew no strangers. He would give you the shirt off his back-even if it was his last one. His kindness, generosity, and humor were not traits he tried to live by-they were simply who he was.

He leaves behind a whole lot of people who adored him. In addition to his immediate family, he leaves behind a large extended family, countless loved ones, and friends who were lucky enough to know him, laugh with him, and be on the receiving end of his kindness. His presence filled every room, and his absence will be felt in every heart.

Joe leaves behind a legacy of love, laughter, and unforgettable stories. He will be deeply missed by all who knew him, especially those blessed enough to share in one of his famous phone calls or sit at Vickie's table while he bragged on her cooking.

Until we meet again, may your fields be green, your tea be sweet, and your fried chicken always be hot.

Mass of Christian Burial will be held at 11:00 a.m. Monday, September 8, 2025 at St Peter's Catholic Church, Stanberry, MO under the direction of Roberson Funeral Home, Stanberry, MO. Burial will follow in the Mt. Calvary Cemetery, Stanberry, MO. The family will receive friends from 10:00 – 11:00 a.m. Monday at the church.
