Phyllis Carter Obituary

Obituary published on Legacy.com by Sunset Memorial Oaks Funeral Home - New Braunfels on Jan. 6, 2026.
Don Phyllis Booth Carter, 81, of Canyon Lake, Texas, went on to her final reward on December 31, 2025. She was born on February 4, 1944, in Clinton, Missouri to Richard Earl Booth Sr. and Molly Jane McElroy Booth.
Phyllis grew up in Pine Bluff, Arkansas as the oldest of four children. She met John Erskine (Jack) Carter at Little Rock University (now University of Arkansas Little Rock) where she chose to sit down at his lab desk the first day of biology lab. They were friends for two and a half years and started dating in 1966. She completed school at University of Arkansas College of Pharmacy in June of 1967, and married Jack on June 24, 1967, at St. Joseph Catholic Church in Pine Bluff, Arkansas.
She worked in the hospital pharmacy at the University of Arkansas Medical Center while Jack completed medical school. She and Jack moved to San Antonio, Texas for his internship at the University of Texas Health Science Center and the Bexar County Hospital (now University Hospital). While there, she had her first son, Scott, and she became a stay-at-home mom. They moved to Charleston, South Carolina while Jack was in the Navy, and she had her second son, Kevin. They moved to Boston, where Jack completed his medical training, and then to Columbia, Missouri, where Jack had his first job at the University of Missouri Medical School. She was active in community affairs, such as working to establish a Ronald MacDonald House in Columbia. They moved to San Antonio in 1983, and she went to work as a hospital pharmacist at the Audie L Murphy Veterans Hospital for 20 years. While there, she earned her doctorate in Pharmacy. After retirement, she devoted herself to being a wife, a mother, and a grandmother.
Phyllis excelled at maintaining relationships, always making people feel special and loved. She was also an avid reader of all kinds of fiction, and she loved the outdoors. Her favorite place was Acadia National Park in Maine, where she and Jack vacationed with the kids several times while they were living at home, and where she and Jack visited regularly throughout her life. She also loved going on whale watching tours, especially observing Orca in British Columbia. At home, she was a four-season flower gardener and fed all varieties of birds from her deck.
Phyllis is preceded in death by her parents, Richard Sr. and Jane Booth; siblings, Richard Booth Jr., Gates Booth, and Catherine "Kate" Wilson; and niece, Mollie Booth Parks.
She is survived by her devoted husband, Jack; her sons, Scott (Shannon) and Kevin (Cindy); grandchildren, Michele (Jessica), Joni, Sean, Shae (Daivyn), Simon, Spencer, and Stephanie; and one great-grandchild, Ava; as well as a host of extended family and friends.
Please join us in praying a Rosary for Phyllis at 10:00 am on Friday, January 9, 2026, at St. Patrick Catholic Church, at 2500 Limmer Loop in Hutto, Texas. A Funeral Mass will follow at 10:30 am.

We remember going to La Fogata in late summer of 2023 with Jack and Phyllis. It was a really nice outing. They had invited us to lunch before we left San Antonio. Bill and I really enjoyed speaking with both of them. We talked about many things but focused a lot on the pharmacology of drugs and Phyllis knowledge was of course comprehensive on very niche subjects. She was such a bright lady, we learned a lot from her and she was clearly a gentle expert. She will be missed greatly. She was a real shining light.
