I had the distinct honour to serve as the Executive Chef at the residence of the United States Ambassador to Canada in Ottawa during the tenure of Ambassador Thomas MT Niles (1985-1989). Ambassador Niles, who I came to know as Tom in recent years, was the epitome of a diplomat and to this very day, the most intelligent and knowledgeable person I ever crossed paths with. We kept in touch regularly over the years and Ambassador Niles even provided me with a letter of reference upon my return to Canada after many years in Asia. Thanks to Ambassador Niles and Mrs. Niles (Carroll), I had the pleasure of meeting many of the illustrious guests who dined at the residence. I have a scrapbook filled with signed menus of many guests that I can now leave as a legacy to my children and grandchildren. This is the kind of people that Ambassador Niles and the entire Niles family were. My sincere condolences to John and Mary and the extended family. Tom, you will be sorely missed.
