Ms. Amy Rebekah Knight, age 43, of Adairsville, GA, passed away Monday, February 2, 2026, at Erlanger Hospital in Chattanooga, TN.
Amy was born in Atlanta, GA, on September 8, 1982, daughter to Cindy Eubanks Giddens and Dale Giddens. As a Christian, Amy lived a life that mirrored her faith: simple, quiet, and deeply rooted in service to others. To many in the community, she was a familiar and welcoming face at Waffle House, where she served as a cook and assistant manager. Amy didn’t just serve meals; she built relationships. Her "regulars" were more than customers—they were friends who followed her from location to location just to share in her company and her cooking. While she took great pride in her career, her heart belonged to her family. She was happiest when surrounded by those she loved most, finding her greatest fulfillment in the simple moments they shared together.
She was preceded in death by her sister, Amanda Jayne Knight Hosmer, an aunt, Patty Eubanks, and her maternal grandparents, Billy and Mary Stanley Eubanks.
Survivors include her parents, Cindy and Dale Giddens of Adairsville; her pride and joy, son, Micah Eubanks of Adairsville; a brother, Sam Giddens of Douglas County; several aunts and uncles, Clyde and Angie Eubanks of Alabama, Clint and Joy Eubanks of Hiram; Carl and Diane Eubanks of Bethlehem, Carmen Eubanks Hardin of Calhoun, Ken Eubanks of Calhoun, and David Giddens of Florida; and a great aunt, Dorthy Stanley of Calhoun.
Funeral services will be held on Saturday, February 7, 2026, at 1:00 PM from the chapel of Barton Funeral Home in Adairsville, GA, with Rev. Lee Garland officiating. Interment will follow in Rolling Hills Memorial Gardens, in Acworth, GA.
The family will receive friends on Saturday from 10:00AM until 1:00PM at Barton Funeral Home, Adairsville.
R. Dudley Barton & Son Funeral Home, Adairsville, will be in charge of funeral arrangements for Ms. Amy Knight.
