Eleanor Sue Mullins Hopkins was born on December 29, 1939 as the daughter of Arthur "Mock" and Katherine Mullins of Elkhorn City, KY. She attended Elkhorn City High School and Eastern Kentucky University.
Sue was retired from the Kentucky Cabinet for Health and Human Services and was a faithful member of the Elkhorn City Methodist Church. Preceded in death by her mother and father and her beloved cat, Max, she is survived by her daughter Kathy Potter Ramsay and son George David Hopkins, Jr, both of Lexington, KY. Her beloved spirit also lives on in her grandchildren, Erica (Dave) Cecil and Samantha Stiltner; and her great grandchildren Anne Katherine, Margaret and Avett Cecil, Kamryn Fields, Emersyn Damron and Tucker Stiltner.
Sue passed from her earthly life on October the 10th, 2025. Arrangements are under the direction of the Clark Legacy Center-Brannon Crossing in Nicholasville with visitation on Wednesday, October 15th, 2025 from 11am to 1 pm with services beginning at 1pm. She will be laid to rest at Bluegrass Memorial Gardens in Nicholasville and will spend eternity in the warm embrace of her Lord and Savior, Jesus Christ.
