Nicole Cowen Papenmeyer (Nikki) passed away peacefully on Friday, January 24, 2025, from her 4 year long battle with cancer. Nikki was born on August 22, 1976 in New York to Rosemary Kutchera Cowen and the late Steven R. Cowen. She was a graduate of Fordham University. She married Jason Papenmeyer on June 1, 2013 with whom she shared her most precious creation-Matthew Robert Papenmeyer born March 30, 2016. After graduating from Fordham University as an accountant she worked at several accounting firms before joining Active International in Pearl River. Anyone who knew Nikki, knew she was a strong minded person who loved to talk. She had made lifelong friends that spanned from Kindergarten all the way through college and beyond. Family and Disney were Nikki's two main loves, but she also enjoyed traveling, going out to eat with friends, reading books, hanging out on the boat at Schroon Lake, watching the Amazing Race and Survivor and gambling. Nikki was the family's trip coordinator, computer whiz and sounding board, and she never showed up to an event without her delicious brownies. Nikki is survived by her husband Jason Papenmeyer; son Matthew Papenmeyer; mother Rosemary Cowen; stepfather Peter Callahan; sister Heather Cowen Reekie & husband Bob; and brother Steven E. Cowen & wife Denise; 16 nieces and nephews; 2 great nephews; 3 cousins; 2 aunts and 1 uncle.
