John, Al, David, and Mark: I was saddened to learn of your mother's passing, but filled with many memories of our growing up just down the block from each other on Sycamore Street -- at play, church, school, and scouts, not to mention the comfort of being able to see friendly faces when I went to the dentist. With my deepest sympathy and best regards to you all.

"Beeg Mama" is my grandmother and has been one of the greatest lights of my life. Never without words of wisdom on the most simplest of life's conundrums. Some of my fondest memories are when she and I would sit on her back porch on the Pamlico rocking back and forth talking and watching the amazing lightening displays across the sound. You never wanted to get in her way in the kitchen. She was always on a mission and moved with a purpose! Waking up to the smells coming from her kitchen which seem only to come from a grandmother's kitchen. They must have a secret cookbook none of us ever knew about. She taught me at a young age how to make the world's best peanut brittle but it could only have peanuts from eastern NC as those made the peanut brittle what it was. I made some for a client one time who loved it so much he asked to have it put into his church's cookbook for a fundraiser. So Mrs. Daisy T. Carson is officially published and her peanut brittle recipe is being used by others all around the southeast. Anyone fortunate enough to have ever had a piece of her strawberry shortcake knows how perfection tastes. My favorite meal she would cook was her pan fried chicken, boiled eggs, and potato salad.
Spending time with her in her garden and watching her eat sun ripened tomatoes straight from the vine. Talk about healthy living! Watching her manage a pack of hungry hunting dogs was a sight to see let me tell you! They always knew who the boss was at feeding time. Visiting with her and her sister while in Virginia she loved to laugh at the road the state of Virginia built just for us. An inside joke for a road named after one of our ancestors who purchased land in the state of Virginia. We literally seemed to be the only ones on that road at all times. Her simple wisdom was what I loved most about her. I have passed many of her words of wisdom along to my 9 yr. old son. She once told me, Boy, the day you stop learning is the day you become dumb. Such beautiful simplicity.
Watching the Tar Heels basketball games with her was fun let me tell you. And she had a way of yawning when it was getting near bed time that was infectious. Always made me ready for bed too! Hearing her yell for the right Mark in the family. I was named after my mom's favorite unclethe first Mark Carson in the family. Beeg Mama would yell either, Mark Steven! (me) or Mark Thomas!. Great and fond memories of so many times and I am so grateful to have had such a long and full life with my grandmother.
Daisy T. Carson was one of the strongest willed and most resilient women I have ever known and I dare say the good Lord may never make another quite like her again.

Love Miss Daisy, she helped Butch and I on Wednesday's prepare many meals. She always ate the dessert first. Miss Daisy loved her "boys". Talked about them a lot. She was a wonderful lady. We have missed her at Bethany. She is eating at the Lord's table now. Peace and comfort to the Carson family. Butch and Brenda Yert
