Henrietta was born in Bennettsville, S.C. on November 1, 1947, the daughter of John Morrison Freeman and Emmie Dozier Tompkins Freeman. She was a graduate of St. Mary’s Junior College and the University of South Carolina. She was the loving wife of John Palmer Gaillard, III for 37 years. She is survived by her son John Palmer Gaillard, IV, MD and his wife Lori, of Pfafftown, N.C., and her daughter Emmie Foster Gaillard Hershey and her husband Clay, of Charleston, S.C. Henrietta “Henni” adored her four grandchildren, Alston Mitchell Gaillard, Parker James Gaillard, Clay Wallace Hershey, Jr., Thomas Gaillard Hershey and eagerly awaited the birth of her fifth grandchild due on February 27, 2009. Henrietta is also survived by her sisters Frances Glover Beringer of Richmond, VA and Sara Ellen Munnerlyn of Bennettsville, S.C.
A loving wife, devoted mother, loyal friend and trusted advisor, Henrietta’s entrepreneurial career spanned a cookbook business to Director of Development of Ashley Hall. Henrietta was a natural leader and able to work well with others in her many volunteer capacities including: Chair of Foster Care Review Board of South Carolina, past President of The Junior League of Charleston, past Senior Warden of St. Philip’s Church, and Trustee of the Episcopal Diocese of South Carolina. She also served on the boards of Life Management Center, the Charleston Cotillion, and Charleston Day School. Henrietta was a member of the National Society of Colonial Dames of America and a life member of the Ladies Benevolent Society. She was a devoted and longtime member of St. Philip’s Episcopal Church.

I am so saddened to hear about Henrietta. My condolences to the friends and family. I first met Henri while teaching at CE Williams. I left Charleston in 1974, but have always felt connected in one way through Henrietta's wonderful cookbooks. Peace sweet lady.
