Catherine Lynn (Henrikson) Jeppson, beloved wife, mother, grandmother, and great grandmother, returned to her eternal home on April 24, 2025 at the age of 75 in Spanish Fork, UT.
Cathy was born on July 16, 1949 in Portsmouth, Virginia. She was the youngest of three children born to Clarence and Madelyn Henrikson, and the only girl in the family. She attended Virginia Tech Institute for a time and later went on to work as a secretary. She was introduced to her husband, Lee Jeppson, by her brother in 1971. Cathy, who had sworn she would never date a Mormon or a sailor let alone someone who wore cowboy boots, was initially not enthused to meet Lee, who was both a Mormon, a sailor, and did, in fact, wear cowboy boots. Despite her misgivings, Lee wore her down with his playful personality and persistence. She also started exploring his faith, deciding to take the missionary discussions and then to join The Church of Jesus Christ of Latter-day Saints. Lee and Cathy were married on Feb 26, 1972, and together raised a wonderful family.
Lee and Cathy lived in multiple places throughout their married life, the longest being Logan, UT and West Jordan, UT. Cathy's love for her family was strong and unconditional. She loved to play games, card games being a special favorite, and would always insist on using "Grandma's rules" when playing with her family. She also loved to read, watch movies with family, and enjoyed working on jigsaw puzzles. Cathy was an avid BYU football fan–very few things could distract her from the game. She loved sharing a game time chat with her husband and her boys. She would encourage everyone involved in the chat to stay positive, and they often joked that she was the reason the team was so successful.
Cathy had several careers in her life, first and foremost being a wife and mother. She also worked for 20+ years at H&R Block as a tax professional and then later as a secretary for the Cache Rich Association of Realtors. She was able to use this experience when they moved to West Jordan by working for The Church of Jesus Christ of Latter-day Saints real estate office.
Cathy was an active member of The Church of Jesus Christ of Latter-day Saints and had a strong testimony of her Savior. She served in many callings, but especially loved teaching in the Primary with her husband. Cathy was loved by all who knew her.
She is survived by her husband, Lee, and six children: Shannon (Brian) Heck, Kimberly (Marcus) Day, Nilo (Dana) Jeppson, Kirk (Suzanne) Jeppson, Jared (Amanda) Jeppson, and Amber (Josh) Nye, as well as 23 grandchildren and 2 great grandchildren. She is also survived by her brother, Barry Henrikson. She is preceded in death by her parents, Clarence and Madelyn Henrikson, and brother Alan Henrikson.
The family will hold a graveside service on May 5th at 10am.
