Viola Laura (Rempp), 97, passed away on Saturday, June 14, 2025 at her home in rural Easton, Minnesota. She was born December 21,1927 to John and Mathilda Rempp at the family farm where she has lived all her life. A funeral service will be held at 10:30 AM, Monday, June 23, 2025 at Immanuel Lutheran Church, Emerald Township, Blue Earth, MN. Visitation will be from 5-7 PM, Sunday, June 22 at Patton Funeral Home and continue one hour before the service at the church. Burial will be in Immanuel Lutheran Cemetery, Emerald Township, Blue Earth.
Viola attended country school through the 8th grade. She married Sherman Mensing, November 29, 1947 at St. Peters Lutheran Church, Easton, MN. They were blessed with 6 children. Farming with her husband and raising the children were her focus. She taught Sunday School at Immanuel Lutheran Church. She worked in the canning factory for a few summers. After the children were older, Viola obtained her GED. She became a nurse’s aid and worked at Blue Earth Hospital, St Lukes Nursing Home, and UHD Hospice and Home Care. She enjoyed gardening, quilting, crafting, and general sewing, but always enjoyed them most when doing her projects with her children.
Viola is survived by her 4 daughters, Charlotte, Nancy, Naomi, and Ruth; sons-in-law, Frank, Larry, and Joe; 11 grandchildren and 25 great-grandchildren.
She is predeceased by her husband, Sherman; 2 sons, Lee and Walter; her infant brother, David; and sister Malvina.
The family would like to give a special thanks to Mankato Eastridge and UHD Home Health and Hospice, and the Winnebago Ambulance and First Responders. They also request memorials to be given to UHD Hospice and Winnebago Ambulance service.
