Rita Carol Jones Appleby was born March 22, 1942, to Walter and Leona Taylor Jones on the family farm in rural Edwards, Missouri, and departed this life August 11, 2025, at the age of 83.

Carol moved with her family to Lebanon, Missouri, in 1948. There, she attended Lebanon Schools and graduated in 1959. She made her home in the Russ and Lebanon, Missouri, area. She loved God each day, trusting in his guidance and appreciating his saving grace. Her loving and giving heart can only be measured by the unknown number of people she helped quietly, without fanfare, because of the gratitude for God's great blessings in her life.

Her life was devoted to her sons, Carl Alan and Mark David Scott. On March 21, 1980, she married Paul David Appleby, and the two shared 45 wonderful years.

Carol was a dedicated mother, grandmother, daughter, sister, and aunt. She found great joy in giving gifts and made it a point to make every special occasion and holiday the most memorable for her family and friends. She loved to entertain, cooking wonderful meals and desserts. She also loved gardening, reading, and music.

Carol is preceded in death by her parents, Walter and Leona; her grandson, Brian Scott; her sisters, Jean Boggs and Eileen Riley; niece, Linda Rhodes. She is survived by her husband, David Appleby, Lebanon; her sons, Dr. Alan Scott and wife Krysta, GA; Mark Scott and wife Lesli, Lebanon; her beloved grandchildren Matthew Scott, AL; Bradley Bare and wife Hannah, PA; Dr. Tyler Bare and wife Rachael, KY; Alex and Laura Scott; and a host of nieces, nephews, and wonderful friends.

There are no services planned for Carol. Her wishes were to be cremated under direction of Shadel's Colonial Chapel.

A memorial donation in her honor may be made to Shepard's Pack, First Christian Church, 500 S. Madison, Lebanon, MO 65536.
