Theresa Albani Poffenberger was born in New Jersey on May 28, 1942. She lived 82 years with a fulfilling life, always loved and decided to return to Jesus on Thursday, January 2, 2025. She passed away peacefully in her sleep while being cared for at ECU Health.
The family will receive friends to gather on Friday from 2-4 at Wilkerson Funeral Home. If anyone plans to attend, a letter or non-metal keepsake would be appreciated to follow in her cremation.
Theresa was preceded in death by her parents, Edward John Albani and Rose Albani. Her bother John Albani, her sister in-law Remedios Eustaquio and her dear friend David Bossie.
Theresa lived most of her life in New Jersey and moved to Greenville, NC to be closer to family. She was married to her high-school sweetheart for years and had 2 beautiful children, who loved her dearly. While in Greenville, she worked for over 25 years at the ECU Dining Hall (West End and Todd Athletic Dining Hall). In addtion, she worked with the ECU Chancellor in administration and catering. She loved seeing and meeting the new students every semester. There were many years where students made her cards sharing their appreciation for her sweet yet hardworking demeanor. She worked at the stadium for many of the ECU football games, and developed many lasting friendships with the ECU football team. She always tried to become involved within the company of Aramark.
Theresa loved books and magazines, enjoyed watching movies, and watching The Grammy Awards every year. She also loved dancing around to music (specifically Elvis or The Beatles) and cooking her favorite pasta dishes for her closest grandchildren Page and Jodi. She was so generous and always remembered everyone's birthdays and insignificant details about their lives. Her kindness will always be remembered and cherished by the ones she has touched in her life. Theresa loved her grandson Owen Matthews very much and had an undying love for her 2 dog "great grand-children" Mayari and Dutchess, owned by her grand-daughter Jodi. Although Theresa is now gone, she will live in her family and friend's hearts forever.
She is survived by her children, Kevin Poffenberger and Cheryl Anne Poffenberger Jimenez; grandchildren, Page Poffenberger and Jodi Matthews, and great-grandson, Owen Matthews.

I met Ms. Terry when I worked as a driver at ECU Transit. She was the sweetest person I had ever met. Bringing us apples or cookies whenever she could. She took my contact information when I graduated and sent me happy birthday cards every year after. I'll always be grateful for her as I never knew my own grandmother so Ms. Terry filled that hole in my heart. Thank you for everything, Ms. Terry. I'm excited to see you again one day
