Eileen Mary Dietz (née Gray)

Eileen Mary Dietz, beloved wife, mother, grandmother, sister, and friend, passed away peacefully surrounded by family on September 9, 2025, at the age of 68.
Born in Mount Kisco, NY, on July 5, 1957, Eileen grew up in Yorktown, NY, where her kindness and warmth began to touch the lives of everyone around her. She met the love of her life, Michael Dietz, while they were both students at Pace University. They married in 1980, beginning a lifelong partnership full of laughter, devotion, and deep love that spanned 45 years. Together they lived in Yonkers and New Rochelle before settling in Wappingers Falls, NY, where they built their home and raised their family for over 37 years.
Eileen began her career in advertising and marketing at SSC&B in New York City, but her greatest joy was her family. After dedicating several years as a stay-at-home mom, she returned to school to pursue her dream of teaching. Graduating Magna Cum Laude with a Master's Degree from Mount Saint Mary College in Newburgh, NY, she went on to inspire countless young minds as an elementary school teacher at Myers Corners Elementary until her retirement in 2019.
Above all, Eileen loved to bring joy to others. Her smile could light up any room, and her gentle, caring spirit left an imprint on every person she met. A devout Catholic, she found strength and peace in her faith throughout her life.
In her retirement, Eileen enjoyed spending time with her cherished grandchildren, crocheting, biking, reading, traveling (with Italy being a favorite destination), and revisiting classic TV shows from her childhood. Christmas was especially dear to her heart - she found joy in baking dozens of cookies and preparing traditional Polish treats such as pierogis and kruschiki, lovingly sharing them with family, friends, and neighbors.
Eileen is survived by her devoted husband of 45 years, Michael; her loving children, Michael (Brittany) Dietz and Kaitlin (Craig) Stile; her adored grandchildren, Henry, Charlie, and Evelyn; and her siblings, Phillip Gray and Janet Phillips. She will also be deeply missed by extended family, dear friends, and all who were fortunate enough to know her.
The family would like to extend heartfelt gratitude to the compassionate teams at Memorial Sloan Kettering, Vassar Hospital, and The Hospice House of Hyde Park for their exceptional care and kindness during this time.
Visitation will be held Monday, September 15, 2025, at McHoul Funeral Home, Inc. (895 NY-82,
Hopewell Junction, NY 12533) from 2-4 p.m. and 7-9 p.m. A funeral mass will follow on Tuesday, September 16, 2025, at St. Columba Church (835 NY-82,
Hopewell Junction, NY 12533) at 10 a.m., with burial immediately after at Fishkill Rural Cemetery (801 US-9, Fishkill, NY 12524). In lieu of flowers, donations may be made to Hudson Valley Hospice.
Eileen's life was defined by her love, her faith, and her unwavering kindness - a legacy that will continue to guide and comfort those who loved her most.
